 Gradually pour a glass of water over the previous mixture, continuing to knead with your hand until you get a soft and smooth dough.


Cover the dough with a nylon bag and leave it in a warm place for several hours until it ferments, turning the dough from time to time.

Ingredients: A handful of fresh spinach. Two big onions. Lemon bean. A quarter cup of olive oil. Two tablespoons of sumac. a pinch of salt.


How to prepare:

Wash the spinach well several times until the dirt that may be stuck between the leaves is removed. Cut the spinach into medium-sized slices.

 Peel the two onions and cut them into small cubes, you can replace this with the people. Squeeze a lemon, then strain out the seeds and pulp.

Mix the chopped spinach with the chopped onion and add the lemon juice, blending the three ingredients together.

 Sprinkle two tablespoons of sumac and a pinch of salt over the previous mixture and stir with the rest of the ingredients until its flavor is absorbed.

Leave the filling for thirty minutes, then drain it well.

Cut the dough into medium-sized balls, then chop the balls with broth until they take a round shape, one centimeter thick.

 Spread the spinach filling evenly in the dough.

Arrange the spinach discs in an oven tray after brushing them with vegetable oil, and leave them on a suitable fire until they become golden in color. Serve the spinach hot with a salad or yogurt dish if you wish
